The WineSellar & Brasserie will host a spectacular dinner featuring the world-renowned wines of Jean-Louis Chave on Saturday, October 17, at 6pm. Guests will begin the evening with a formal reception served with sparkling wine in The Casual Side with David Shiverick, co-founder of Langdon-Shiverick, importer for Jean-Louis Chave Vineyards. The Wine Dinner follows at 7pm with a menu that pairs perfectly with JL Chave’s award-winning selections, including a First Course of Bouillabaisse, a classic preparation with toasted baguette, paired with a 2012 Saint-Joseph “Celeste” (91 points Wine Spectator) and a 2011 Hermitage Blanche (93 points Wine Spectator); the Second Course features Wild Mushroom Flatbread, with goat cheese, arugula and truffle oil — paired with a 2011 Côtes du Rhône “Mon Coeur” (90 points Wine Advisor); Third Course of Duck Leg Confit, with flageolet beans and pancetta — paired with a 2012 Saint-Joseph “Offerus” (90 points Wine Enthusiast); and a Main Course of Steak Au Poivre, with roasted marble potatoes and haricot vert, paired with a 2011 Hermitage “Farconnet” (92 points Antonio Galloni) and a 2011 L’Hermitage Rouge (96-98 points Wine Advocate). The dinner concludes with a special Merci Beaucoup, of House-infused luxardo cherries.

 
Wine growers in the northern Rhône since 1491, the Chave family (currently helmed by Gérard and son Jean-Louis) represents 16 generations of unbroken lineage committed to the production of some of the finest Syrah, Marsanne, and Roussanne on the planet. The key to perfect balance in Chave’s Hermitage is in their remarkable blending skill, which begins again every season. Many hours of thought, insight, and conversation go into the final component blend for Hermitage. Never once has the Chave family released a single vineyard or cru Hermitage. Jean-Louis Chave Selections, his négociant line that sources grapes from various areas in the northern Rhône, represents a more accessible way for the consumer to experience the wines of the Chave family. “Mon Coeur” Côtes-du-Rhône is a blend of excellent plots in Vinsobres, Visan, Buisson, and Estargues while “Silène” Crozes-Hermitage is 50 percent estate Syrah and 50 percent purchased. As with all things Chave, quality is eminent even at the entry level. The Chaves’ methods for all their winemaking are traditional farming, super-low yields, full ripeness, and minimal manipulation. Their unmatched meticulousness continues through five centuries to render venerable expressions of the purest of northern Rhône terroir.
