University Heights is being taken to new heights of late, thanks to bars and restaurants offering unique and stylish environments. First came the adorably dive-y Small Bar, then the expansive, marble-laden Park and Rec, and now — sandwiched between them — Madison. Like the aforementioned hotspots, this venue is high on design and spirited adult beverages. A full craft cocktail program developed by all-star Milwaukee bartender Dan Dufek is highlighted by The Hopping Cholla, an innovative margarita spin incorporating mezcal in place of tequila, black lava salt, and egg white for a soft, coating texture. Enjoy it with gravlax — strips of salmon marinated in beet juice (as opposed to traditional Nordic vodka-cure) and served with citrus-yogurt sauce and microgreens in a tangy vinaigrette — either from the bar, amid clean-yet-rustic woods, or a magnificent, spacious patio with an arching roof offering a visage of the sunset or night sky.
